The vineyard is cultivated using Organic and Biodynamic methods - Biodyvin (2011) and Demeter (2022) certification
Maceration of Sauvignon in amphora (terra cotta), from Tuscany, during 9 to 11 months, in full grapes only hand destem
Then aged in the same amphoras until next harvest, and bottled in next march (so 17 month after the harvest)
No sulphites added
It can be classified in the category of orange wines
Very spicy aromatic profile but quite easy to access
It is a surprising and confusing wine, nobody could find the grape variety nor region during a blind tasting
As an accompaniment to sushi, truffle risotto or refined cheese
